I have tried many banana bread recipes over the years, but they are never as good and I always come back to this one. It has become a family favorite. It is also very easy to make. I use a KitchenAid mixer when mixing this recipe, but it can also be mixed by hand. It helps to have the butter set out to soften prior, and if using frozen bananas they defrost rather quickly on the counter while mixing the other ingredients together. Yes, you can use frozen or fresh bananas either one is fine. If you decide to take the baked loaf out of the pan before eating it, I recommend loosening the bread by inserting a knife around the edges. Usually we just cut the slices right out of the loaf pan. I always make two loaves because they go fast in our family or you can always gift the second loaf. If you would like to make one loaf, just cut the recipe in half. I hope you enjoy this easy, moist, cake-like, and very tasty banana bread as much as we do.
Ingredients
1 1/2 cups sugar
1/2 cup softened butter (1 stick)
4 eggs
2 cups ripe bananas
4 cups Jiffy Baking Mix.
Instructions
Preheat oven to 350 degrees.
Spray or grease two 9 x 5 inch loaf pan and set aside.
In mixing bowl combine eggs, butter, and sugar
Add bananas and mix until creamy
Add Jiffy mix and combine until thick and creamy.
Pour mixture evenly into the prepared loaf pans.
Put the filled loaf pans in the oven
Bake 55 minutes.
Check with toothpick to see if done. The toothpick should come out clear and the bread should be a golden brown.
Cool slightly before removing from pan
Slice and Enjoy! It is so good warm with butter.
